I once had a photographer tell me that you can always reduce DoF from a picture, but you can never get DoF back. So if you go too far, you are screwed.

Now here is a great example of why more DoF is better. Credit goes to Aliens Skin Software

That's all well and good if you have a suitable subject (something easy to cut out and separate from the background) and time to mask it out and photoshop it, but it's not always practical to do that depending on what you're shooting.

Plus you don't need to use Alien Skin to have creative bokeh effects
