Canon 580EX II in mid-day Sunlight

Hello,

I have a 5D with a Canon 580EX II flash, and was wondering what camera and flash settings would work best during full sunlight.

As all of us know during mid-day sunlight without clouds, the sun casts harsh shadows making it difficult to get a well-lit face. Can anyone here recommend flash settings for full sunlight and for evening shots on the beach as well?
