Audio for Video, utilizing the xlr ports on a pro video cam

I have been shooting video with my T3i and using an Azden SMX10 to capture audio with decent results. I am going to add either the Canon XA10 or the new Sony NX30 to my arsenal in the near future. I was just wondering what mic setups most guys use. Do most people use one xlr shotgun mic and have it record to both tracks? I was thinking of using twin xlr shotgun mics going to the separate tracks for a stereo effect, does anybody do this? I noticed that stereo xlr mics are fairly rare. Thanks in advance...
