canon 60d or nikon d7000 please help

The smart money of course is on the 60D for the lens compatibility and familiarity.

However since you seem pretty keen, and know the disadvantages of buying into another system, then I wouldn't let a plastic lens mount stop you from scratching that itch. The 18-200 is mettle mount, and the 18-105vr is excellent quality for a kit lens. You could also look at the 16-85vr if you really want to steer clear of plastic, and give yourself some useful additional wide angle at the same time.
