Need Help with Exposure Compensation using the FZ100

I posted this question on the General Photo Techniques forum but am also posting here since some of you have either the FZ-100 or FZ-150.
I took photos of a swallow yesterday and when I downloaded them I found there were areas that were over exposed (first two photos):
Today, I tried adjusting the EV by -1/3, -2/3, and -1. The -2/3 photos (next two) still have over exposed areas although not nearly as bad. The -1 photos were too dark.
Any suggestions for how to adjust the camera settings for this type of shot? Thanks in advance for you suggestions.
