AF area in EVF mode is variable - make it as small as possible for precision.

Start up time will depend on VF mode, power save and view mode, as well as whether you have sensor cleaning on. I don't find it slow at all in OVF mode and I have all the other modes switched off. Sensor cleaning is on turn off.

Manual focus mode is designed for use with the AF/AEL button which will focus the lens and then allow you to adjust it. The adjustment is then very precise. It is not designed to be used purely in M mode with these lenses.

Contrast AF does not work the same way as DSLR AF. You cannot focus on an edge, that will just give you a nice clear background. Cover the focus area with the subject and you are fine.
