What I do on bright sunny days outside is to get the subject to face away from the sun (else they squint when looking towards the sun), expose for the background (to avoid blown highlights), and let the flash light up the subject.

With a SB600 you should be no more than about 2-3 meters away from the subject and you might have to set the flash at +0.7 EV compensation, but that depends on the harshness of the ambient light.
