I don't have the camera but,
1) compose in B&W jpg mode and switch to RAW when ready to shoot.
2) can you convert a RAW to B&W in the camera? If yes, shoot raw and convert to B&W. Adjust and Repeat
Camera B&W conversion isn't as flexible as photoshop conversion. You will likely want to do the final RAW-> B&W in photoshop.
