Old (ground glass) focusing screens like you find in the Nikon F2 showed the proper DOF for any f stop - and since focusing is normally done with the lens wide open you see the narrowest depth of field.

The bright plastic screens used in later SLRS and modern DSLRS are etched with tiny prisims - this makes the screens appear brighter at when the lens is stopped down or with slower lenses - but the tiny prisims apparently change their optical properties so you don't see true depth of field at wide apertures.
