Always Matrix Metering?

Recently switched from Canon and enjoying my D700 while I wait for my D800 to get here.
I've noticed just about everybody sticks with Matrix metering. There are some spectacular shots over on FM with some polo players and the photographer used AF-C 21 in Matrix on his D800.
Is Matrix good enough that everybody just sets it there and forgets it?
I noticed, for example, in the user manual Nikon suggested center weighted was very good for portraits, where the subject is smack in the middle of the frame. Does anyone bother switching to center or spot, depending on application?
