Yeah, manual focusing is the way to go. And turn off VR if your lenses have it. But you're still going to hear any fussing of your hands on the camera. For instance, I can hear when I'm focusing my 50 1.4g lens even with the AF turned off because that focus ring makes a sound kind of like a piece of paper sliding against another.

Video is tricky and requires learning a whole new set of skills. It's fun though if you're up for the challenge.
