I shoot the D7000, basically the same sensor as your D5100, and there is a minimum of 4 stops difference on sensor size a lone (5.45 crop factor versus 1.5 crop factor.) But there is more to it than that. The EXR sensor buys us a lot of dynamic range, but also generates artefacts from demosaicing that are not there on regular Bayer sensors. So I have always felt that the amount of detail that is preserved is closer to 5 stops better.
