I spent 3 months in egypt. I did Cairo, Luxor, Alexandria, Hurghada, Sharm, Dahab, Nuweiba, etc. and the Sahara.
It really depends on your subject matter and your own personal style. I shoot architecture and landscape and was there working on a large architecture project but took a week off to explore the desert with some Bedouin guides. I was shooting Canon at the time and shot the 16-35mm, 24-70mm, 70-200mm. The 70-200mm did most of the heavy lifting for landscape shooting. I like tight narrow landscapes and the longer range was helpful in the Sahara. The 24-70mm is a great all purpose lens and if I could only take one that would be it. The 16-35 is also a great lens and extremely useful in the cities if you prefer the wider FOV.
Whatever you decide have fun. I have been to a lot of places around the world and Egypt is one of the most memorable.
