In Galapagos you will mosty use boats from 10-100 passengers to get between islands and then go ashore in inflatible boats. There are some shooting oppertunities from the inflatibles but you will not be able to use a tripod there. Mostly its from land.
You can use tripods on land but setup time is limited as groups have to stay together and will be moved on by the guide. I normally set up after the initial landing and then carry it with legs extended. If you don't have very heavy long lenses then I would go hand held most of the time. Maybe bring a tripod on any late afternoon visits that might get close to sunset. In theory all visitors should be off the unpopulated islands by sunset.
