I would say the 70-200 f4 IS to complement your 24-70 and a Lowepro Flipside 300 (which opens from the back so you don't have to be worrying about someone getting their hands in your gear). It will also fit a 11" Macbook Air in a pinch (in the same photo compartment) if that helps.

Now, two heavy lenses (not the heaviest but still) is a lot, depending on how much actual walking you'll be doing, but because of your destinations it sound like you could use an ultrawide like the 10-22... Wish I had one when I went to Cuba....

I took my 35 f2 and 50 f1.4 to France besides a couple of zooms... Didn't use them at all...
