I'm not sure about that, though. If the baseline RAW contains less saturation and therefore less chroma noise, does the converter have an easier time restoring the appropriate appearance with less need for noise reduction - therefore retaining more detail?

The loss of colour information is a direct result of NR. In short, what the camera did, can be done with something like Topaz. In certain areas (low contrast detail) even better.
