White balance and level horizon- during shoot or post-processing?

I often read that two parameters MUST be set during a landscape shoot as opposed to setting them during post-processing:

The correct white balance
A level horizon

Does anyone care to render an opinion?

My opinion? I set the white balance for a given scene and leave it there unless the light color changes drastically (say sunlight to indoor light). Then I'll play with the white balance during post-processing (which I often do anyway.) The same with a level horizon. I try to get a level shot, but I never had any problem straightening a slightly-off horizon with software (Photoshop Elements.)
