If I would go to f5.6 for maximum sharpness and some additional DOF, I would have to double the ISO and the exposure time: The result will be a noisy blur. My lens has f2.8, sure I'm going to use it!

I understand your fear about letting the camera choose the focus point: It is only recently that I tried it. Turns out that the camera is quite good in choosing the subject, and yes, sometimes he gets it wrong.
