Backpacking kit for a 7D?

Hi, heading to UK, Cuba, Colombia, Peru soon. I've scoured forums but so far found no answer/too many answers.

I have:
Sigma 24-70/2.8
Canon 50/1.8 - definitely taking. It weighs nothing and I love it.
Tripod - definitely taking.

I can afford one more decent lens, but don't know which end to go. Wide or zoom?

Forums are suggesting the 24-70 might not be worth taking so I could trade that in and get two/one great replacement.

I love shooting at 2.8 or lower, so that's a big requirement for me. I know I'll regret getting a 4+.

I pondered the 70-200/2.8 (no IS) but I'm worried about the weight. I'm cool with ditching IS for the savings. If I get a 10-20 or similar I'm nervous about no zoom.

Thanks for any advice you can give me.

RE: budget - AU$2000 and under, but bear in mind I'm looking at refurbs/2nd-hand and trade-ins, so don't put too much stock on that with your suggestions.

I'm not a pro shooter - I'm decent but very much still teaching myself. Album of Tassie Trek shots here (with my old Nikon D50 kit though)
