I never had a canon 100-400mm nor the sigma, but a few things I notice about your shots, that seem to be making you lose some details.

It's not good shooting at ISO 1600 on a corp because of noise, unless there no way you can get away with a lower ISO, most newer corps handle 800 but, drop detail fast after ISO 800, for testing I would go no higher then ISO 400 for sure.

Part of the problem I think is shooting at f8 as that to get sharpness, but better lenses at 400mm, should do very good wide open or stop down just a little ( f5.6 to f6.3), as the most you have to stop down, because of the higher ISO you'll need most times for stopping down.

Like my canon 400mm f5.6L prime can easy blow them wildlife shots away, at ISO 400 @ f6.3 using my canon 50D, but I do under stand you have a zoom and you may not care about, fine detail looking at them at 100% like me, but ISO 1600 will take away a good bit of detail.
