I watched the Zacuto shoot-outs, and my impression was that the Canon cameras compared favorably to high-end cameras.

To OP - why are you shooting at 720P if you want the best quality? Also, try a simple high-quality lens like the 50mm 1.8 (if you don't have one, buy it immediately for under $100) and do some tests at different apertures. Find out what your camera is capable of, try to eliminate so many variables. 60D is capable of excellent quality, but you need to work to get it. Compression will cause artifacts, you will have to work around them.
