RAW is your answer. We can discuss more, but want you to see somthing. You are dealing with a color space that does not contain the colors captured. Like stuffing 20 lb's of stuff in a 3lb bag.

Capture in RAW, Processs in a color space large enough to contian it, convert to sRGB when processing for web share.

I find it helpful as well to calibrate my monitor and use Passport Pro to calibrate my camera for ACR.
