Art Class

I have my canon 60D with EF-S 15-85 mm f/3.5-5.6 IS USM Lens for sometimes now.

I will be running an art class that involves participants making hand moulds from alginate, then pour paris plaster into the hand mould. This activity will be indoor.

I would like to know what 2 settings would be best. First setting all image to be in focus. Second settings with the background blur. I am really an old boy used to use Canon A1 (film) and always used AV and manual settings.

The camera itself is absolutely great. Please kindly suggest settings that images would be suitable for print and internet.
