Testing a D700 recommended settings?

I have my Olympus E-5 and lenses in for some minor repairs/maintenance cleaning, but I have a Bridal Portrait shoot. The camera/lenses had to go in for them to be back in time for the wedding for said bride.

I decided since rental prices for similar Oly gear are $100 more to rent and dip my feet in the Nikon pool as when looking for a replacement down the line the FX nikons have my first choice.

Long story short I was hoping for users of the D700 who shoot portraits to assist with preferred settings / a site from a reviewer / professional user who recommends settings to get the most out of the camera to minimize post as I have come to do with my Oly Gear?

Thanks in advance for the help. Oh by the way the rented equipment is D700 with battery grip 28-70mm 2.8 and the 70-200 VRII
