Epson Compatibility

A minute ago my intended message for this topic was posted blank. Sorry.
My Epson Artison 700 is about 3 years old but never used. I now want to use it with my new iMac. Checking Epson's website I find that the printer's software is not compatible
with Lion. A friend suggested to try to use it without the software installed. Is that o.k.? This is probably a dumb question. I am new to digital, but 65 years experience in real photography. I also posted this in the printer's section.
