My guess the level of HDR is the level of "softness". If you want more contrast, don't use + - 6EV, maybe + - 2EV is the best for you. I use all the time 6EV level, because I like post processing. The most important for me to see a histogram a little bit narrower then the total limit. In this situation I'm sure - all image information is there.

I don't like symmetrical DR extension because for me sky is more important then black elements, so I try to move histogram slightly on the left, mostly I use - 0.7 EV. In this situation sky is a little bit more blue then I need, but the final image can be "up to me". Sometimes annatural blue looks very nice, if not, I can change it easily.
