Like WineO said, black & white is not suited for every picture.

In that picture both the tree and the squirrel have a very fine texture, so they blend if you take color out. You can't exactly make fur "pop" out either. Blurring the background (the tree) would be the logical approach, already well demonstrated by mikes and others. I wouldn't sharpen the squirrel any further, in b&w sharpness leads to bright/white texture (because sharpness is just contrast at a small scale, and contrast requires big differences in brightness, especially in b&w).

I like the picture very much in color, I would just work on that.
