These only apply directly to JPEG, but all can be replicated in RAW processing.

Highlight tone priority.

As with all Canon cameras, if you turn on HTP you'll get an extra stop of highlight range in your RAW files as well as the camera JPEGs, which you should be able access with any decent RAW converter. For a RAW user, it's conceptually almost the same thing as underexposing by a stop to protect your highlights, only with the advantage that the JPEGs themselves are more usable.
