how do you measure image quality in real life?

I have a question perhaps someone can help me with.

I see a lot of posts say "Image quality of xxx is better than image quality of yyy". I personally cannot make out the difference between an image taken at 100/200 ISO with a GF1/20mm or a Fuji X100 after they have been through my Lightroom workflow. I view my images on a 2560*1440 monitor so i cannot view my images as 1:1 fullscreen unless i zoom into specific parts of the image. I print them on A4 paper which does not yield a difference either, to my eyes. So I was wondering if there is something that I am missing here.
