5DIII: low light sensitivity -2EV, what does this mean?

I know this refers in general refers to the low light limit for the camera's AF system to work, and something about it equivalent to the reflected light off of a full moon, but this is very vague to me.

But what are the details and context surrounding this number? How is it derived? What does it mean in actual real world applications?

Side note: apparently this spec is better than all previous canon bodies, which bottoms out at -1EV.
