It only offers ISO auto if the camera is in full auto mode or a scene mode. Most D7000 users will be using Aperture priority, Shutter priority or manual mode depending on the situation. In these modes (and in progam mode) Auto is not offered when you scroll through the list of ISO values presented when you press the ISO button.

It might help the OP to put the Auto ISO setting in his frequently used setting menu, making it easier to find and access.

I find that I set auto ISO for a given situation and don't often want to changed it on a shot to shot basis. If I find that I do i will switch auto off and selct ISO on a per shot basis. Its not that much of a hassle. If the light is very changeable for whatever reason leave it on Auto ISO.
