To change the default Camera Calibration Profile, which I believe is what GuardianFlash is referring to, simply follow these steps:

1. open an unaltered raw file in ACR

2. go to the Camera Calibration tab

3. set the Camera Profile to Camera Standard

4. from the pop-out menu that can be accessed from the top-right of the Camera Calibration section select the option to "Set New Camera Raw Defaults"

5. click Done to close the image.

Every time you open an image from that model of camera the Camera Standard profile will be used instead of the Adobe Standard. This method can be used to change any of the settings to act as a default so things such as sharpness, tone curve, clarity etc can be used to set the default to a look that you prefer as your starting point.
