As a Canon shooter, I am very envious of the Nikon 200-400 and personally I would be taking it. However I am one of the crazy people that lug around the 800mm there so really it depends on your priorities for your trip.
There are many oppertunities for a 300mm as much of the wiildlife is not afraid of humans. However you can't wander from the paths and sometimes its nice to be able to choose subjects a little further away.
If you take both, you can always choose for each island visit. On any cruise, you should be given a briefing each evening on the next days visits. You should get a morning and afternoon island visit.
