You activate the auto-focus and self-timer using the same shutter button. And auto-focus happens first and does not change over the course of the timer, AFAIK.

If you want to shoot yourself fishing, you may want to go with manual focus (since you are not moving around). Generally, during day time, you can use F4.0 and focus somewhere 8 ft away and pretty much everything is in focus. You may also consider using remote/wireless trigger.
