The "Leica" look

Hi all,
coming from a D700/pro glass, I can't help but look at the images on this particular forum and marvel at how organic the images look. The bokeh in some of the images you guys/gals have posted are quite breathtaking. While I understand there's a wealth of choices in lenses but it seems the general quality is really stunning.
Is it all about the lenses? Reason I ask is that I'll be picking up a Fuji Xpro-1 soon, would love to try with an M mount lens. Everything that's oof is so creamy dreamy and generally pleasant to look at - never harsh or distracting. Perhaps I've just looked at some of the better examples.
Are there any particular lenses which really stand out from the crowd? I generally shoot around the 50mm focal length.
I really love the look of this one
