X100: Teach me to zone focus

Hi All,
I want to try something new and hopefully it will happen this weekend. I found a new street market here in Shanghai and I want to come away with significantly different images than what I normally do.
Recently I saw a photograph's web site and was very impressed by his images. I cant recall the guy's name....mabye Brian Auchbach or something like that. Anyway, he uses and X100 for photojournalism and gets fantastic results. Looking at his EXIF info I noticed that he shoots a lot at ISO3200, even in broad daylight. His apertures are f/8 to f/16. I'm guessing (but not sure) that these settings are indicative of a zone focusing approach to photography. Having such a small aperture allows for much better focus potential and quicker photo opportunities.
So, is that all there is to it? Boost ISO really high, stop down the aperture, and then shoot like that? I know that you can set the focus at a certain point by setting focus to manual. But I have a hard time judging what distance I need. 2 meters? 5 meters away? Fuji's in-camera DOF scale being so wrong doesnt help either.
Any tips to share? I'll share my images after the experiment!!
