Epson "media" options

Hi. I have and Epson 2200 and have been trying out Canson Baryta Photographique. I've downloaded the profile but I'm wondering about the Media choice. Their literature recomends Watercolor which in an Epson option. The paper's finish is luster.

What effect does media choice have. Does it affect the amount of ink and is the choice critical to the result?

Never seen this addressed and can't find the answer in Epson's site.
