What about the hair, ears, clothes etc? Choosing to accentuate specific parts of a picture is the creative choice of the photographer. You don't have to like it - others will. Besides you stated that f8 or f11 should always be used in the studio. You didn't specify the background. My point is that your 'rule' is incorrect.

35mm Film for it's wider DR, smoother graduations; digital for it's higher resolution, economy of time & money.
