Actually, processing doesn't affect the write speed; but it effectively reduces the size of the buffer. Once you fill the buffer and continue shooting, you reduce the effective write speed. My tests just barely tap into the buffer (11 frames at the settings I use, vs 15 frames shot in my tests). 11 shots are fired before the first one is written to the card. So the rates for the fastest cards are not far off the mark for the camera's actual write speed.

Cards that are faster than the camera's maximum write speed, of course, are still valuable: with the right card reader and computer interface, you can take advantage of a lot more of that speed - up to 70-80 MB/sec or more.
