I was just there the first week of December with a 24-70 and 7D. It should do fine. I also took my 10-22 and was constantly alternating between the two. I'd definitely look at renting something wider as well if you don't already have something. It can easily come in handy. A 70-200 will be good for Sea World and Animal Kingdom. At Animal Kingdom, I found myself using my 70-200 f/4 IS L with a 1.4 extender. If you stay at a Disney resort, you get extra magic hours where each park either opens an hour early or stays open 3 hours late. The extra 3 hours are well worth some long exposure night shots.
