I've been on safari twice in East Africa (Tanzania and Kenya) and I'll tell you that you are in for an experience of a lifetime if you go with the right safari leader. If you haven't booked a trip yet I highly recommend going with Paul Renner (Renner Safaris). You won't find a better deal considering everything (like a max. of 3 photographers per vehicle and wonderful accommodations).
As for lens choices, I carried two bodies with me. One body with a 70-200mm f2.8L and the other with a 300mm f2.8 L (with a 1.4x doubler a lot of the time). Of the two choices you mentioned, I would go with the 100-400mm L over the 70-200mm L because you are going to want more reach than the 200 will give you. Paul Renner, who captures amazing images (visit his website), uses a 100-400mm L as his go to lens.
