how do you shoot true hdr photos?!?!

Its like sony did everything it could to discourage actual hdr photography, or good ones anyway. The AEB only going to EV.7would only be inconvenience, but the lack of the ability to use a remote while bracketting is frustrating and plain stupid on sonys behalf. So please share if you have a technique or idea of how to take sharp hdr photos without the in-camera effect? Thanks!
