You're just looking at the wrong thing - what you mention above is the Focus Mode (see page 33 of the manual). You want instead the AF Mode which gives you a choice of either Face Detection, AF Tracking, 23-Area, 1-Area and Pinpoint, for how the focus will be decided by the camera. See beginning on page 83 of the confusing and poorly-written manual for the discussion of these settings. You can put the AF Mode on the Quick Menu so you can easily select which you want with just a touch (see page 59 of the manual). Hope this helps!
