The non-CPU setup is really geared for prime lenses, IMO. This is true also of the D300 and D700, before anyone faults the D7000 as crippled. If you set up the lens for maximum aperture (pick whichever focal length you'd like), as you zoom in (closer), the lens aperture will decrease, but the camera should meter based on the amount of light you're getting in, and thus adjust the recommended shutter speed. Try it and report back, if you can. I've never used a variable AIS with the non-CPU setup.
