Need Help with PP Color Adjustment

Hi All,
While I consider myself proficient with most post-processing techniques, my limitations are usually color related. I have a Sigma DP1s (which I like), and am generally satisfied with the photos it produces, except when it comes to foliage color. Malcolm Lyons posted an article which compared Bayer vs. Foveon sensors here:

The Foveon samples in his article are similar to what my camera produces. While the greens in the Bayer sensor sample have gone a bit too far for my taste, I would like to achieve a foliage color somewhere in between the two.
So, how do I do this? I have Photoshop Elements and, of course, Sigma Photo Pro.
Any help is greatly appreciated!
