I think the RAW+JPG option is exactly for the purpose you're after.

We are using our D7000 this way, because my wife doesn't want to fiddle with the images and is mostly interested in 'snapshots' for documenting purposes, whereas I am the fiddler who messes around with the images a lot to find those few pictures that I can take to the printing stage. Besides, I do HDR, panoramas, stacks, etc., which all benefit from or require RAW images to begin with.

So yes, go ahead and use RAW+JPG.
