stupid newbie question about auto ISO

Hi all.

As a novice, I assumed that there would be some way to manually adjust both aperture and shutter speed but leave ISO set to auto. My NX100 won't do this... in M mode, the ISO always reverts to manual. Is this true of ALL cameras? Why? Is it a hang over from days of yore when film was physically loaded into the camera and ISO was not selectable in real time?

Related question: in either A or S mode with auto ISO selected, how does the camera firmware decide how to trade off ISO vs. the other free parameter (S or A respectively)?
