The eyecup covers a much larger area of the glass and a provides a much larger darkened area around the viewfinder. The effect is that you lessen the direct contrast between bright surrounding light and the viewfinder. That bright light causes your pupils and brains to adjust and subsequently darken the perceived brightness of the viewfinder. The cup also reduces glare from light coming from the side.

All in all the effect is similar to wearing a hat or a sun cap on a bright day.

I was sceptical, but the difference was amazing.
