I can tell you why I shoot some images in B&W mode and some in color. It's called pre-visualization. I'm an "old" film guy. I see some shots in B&W and some in color and pick and choose what I see as my final vision. When I shoot people in B&W, I tend to push the exposures hard - to the point of blowing out some color channels if the shot were tried in color. That's just me and the way I see images.

I tend to shoot my S3 in F1 mode for people and leave all the other settings set up for B&W so I just have to shift to B&W mode.

For some people, I agree it is best to shoot in color and post process.

It is not the fall that kills you, it's the sudden stop.
