I am not going to delve into the reasons of your switch. D700 obviously will have better AF and high ISO. But Canon 5D is still the best camera for 1000$ - My opinion.

Things to look for:

1. There has been an acknowledged issue by Canon where the side brackets that hold the mirror were not strong enough, and the mirror would come lose. This issue is usually fixed by Canon free of charge if sent it. You can ask about that to the seller.

2. Shutter count - If the camera was serviced by Canon (ever), they would have written down the shutter count in the letter that accompanies the camera back. So again, a better choice will be to buy a 5D that has been recently serviced by Canon.

I guess you can always look at the hot shoe wear. Usually if there is a lot of wear, you can assume that it has been highly used.
